Washing
  • Remove as much foreign matter as possible, including dirt or sand, prior to this step
  • Two principles of a good wash: soak time and agitation
  • Different types of wash tanks/systems for floating or sinking food products
  • Disinfectant or “kill step” can be added at this stage
  • Some end products may require blow drying after washing to remove surface water
