Risk management in some sense has replaced return on investment as the highest priority among food processors today. The outright cost of recalls and negative publicity are enough to take years to overcome if not to put a company out of business entirely. In recent years food product contamination by virulent strains of bacteria has made national headlines by killing people or making them seriously ill. These outbreaks motivated the entire food industry to upgrade equipment and procedures and spawned national legislation.
